The recipes on her website are pretty simple, healthy, and best of all.. DELICIOUS. Honestly, I was skeptical at first when reading about the quinoa pizza bites since I've never really experimented with quinoa before but I LOVED how they came out.
I made some additions to her recipe (increased it by 1.5, added a lot more cheese and pepperoni, some mushrooms, etc.) but it still came out really good.
I also made some of her "Double Baked Potato Bites". I would totally change the name to "Loaded Potato Bites" since I used a total of 5 potatoes, 1/4 cup sour cream, 1 1/2 cups cheddar cheese, 1/2 cup parmesan cheese, 6 green onions, and a POUND of bacon.
All in all, delicious food, lots of leftovers, and still in the last quarter of the game. Such a good night.
